Yes, as you can see I am more than halfway through my commitment to bake all recipes in one of Sweden´s most classical cookbooks when it comes to baking- Sju sorters kakor. When I started a little over a year ago I set my goal time to my birthday this year which is the 28th of May. I can now state that I won´t be able to manage that. As of yesterday I have 104 recipes left and I do have a life aside from baking, I work full time for starters so it might get tough to fix it on time. But as my husband says, it is you who set the perimetres then you can change them too. With only 67 days left to the finish line I believe I´ve to stretch it a bit.
Yesterday I made Napoleon pastries, which is one of my favourite pastries all categories. Layers of mille feuille, sweet whipped cream mixed with vanilla cream, and jam on top. I made mine a little bit smaller than they are at the pastry shops, that way I could eat 1½! There are many versions of a Napoleon pastry all around the world but this kind derives from Växjö in Sweden from the mid 1800s.
Easter´s around the corner and this year we will spend it hopefully skiing with the family. Hopefully there will be enough snow where we´re going. I am in charge of the fika bread of course so I know what I´ve to do. Fika is a very Swedish thing. It is coffee with something sweet to eat. Fika- if you haven´t tried it you´ve missed out!
